Week beginning April 13th - Birch Sap and Infusion Menus

Last weeks Cambodian menu seemed to be just the ticket, proving to be very popular. One of the challenges of Kaffeine is estimating how much food to make every day, because of our premise license nothing can be made to order (not including beverages). So every day manager Gina and I go over yesterdays wastage, then predict the following days portion amounts taking into account weather, day of the week and the general vibe. What I noticed with last weeks Cambodian menu is people are craving more variety and balance of flavours.

This week Kaffeine Eastcastle is moving to the neighbouring west country of Cambodia for inspiration, Thailand. Flavours here are a balance of salty, sweet, spice and zest; rustic yet a clean finish on the palate.

Our salads this week all include a base that traditionally requires water to cook. However I have a fresh batch of birch sap water which is basically water but with many many added benefits, similar to coconut water. If you're not familiar with birch sap it is a spring like water that comes from a birch tree. Sugar produced by the tree during summer is stored in the roots throughout winter. In early spring the sap rises with the first thawing, carrying the stored sugar with it. By drilling a hole into its trunk you can draw the sap stored in the trunk. This water is a balance of electrolytes, potassium and other phytonutrients. In places like Russia, Scandinavia, Northern Europe and Northern China birch sap has been used as a remedy and tonic for people suffering with liver disease, diarrhoea, constipation, kidney stones, headaches, flu, dandruff and eczema. Even if you suffer from none of these symptoms birch sap is still beneficial. Making this weeks Thai inspired salads extra healthy by being absorbed by all the goodness and superpowers of mother natures tree tonic.  

Back down at big sister Kaffeine GTS chef Khan and her mighty team are cooking up an infusion storm. Before I went against the grain in my allergy free days at Kaffeine GTS I created the curried pea and feta scone (Australians say 'scrolls') these are one of my favourite cheat things to eat and Khan has put them back on the menu. 

The GTS flavour queen has developed several tasty salads, starting with a spiced beef asian salad mixed together with some of springs best new vegetables, asparagus, beansprouts and yellow peppers. Then we have a mediterranean salad of pink grapefruit, olives, corn, feta, radicchio and avocado dressing. Lastly new green beans with... wait for it... spicy tomato dressing. If you're sitting in free jugs of water are available.
