Week beginning April 27th - Spring Menu Inspirations

This weeks menu at Eastcastle Street is courtesy of manager Gina. Earlier today she asked if I knew what next weeks menu inspiration will be? I replied 'I have no idea, but maybe we'll visit north of Burma (last weeks menu) and do a Bangladesh theme'. Gina then suggested 'Spring' as an inspiration and a new menu was born. 

Spring also ties in nicely with the boxes of pre-orded mayer lemons that I received today. Mayer lemons is a citrus fruit native to China and can be described as a cross between a lemon and mandarin. Though still sour you can eat a mayer lemon on its own as they have a slight sweetness to compensate. The skin is thin and has a fragrant smell similar to oranges. This week the kitchen team is very excited to be incorporating these wonderful fruits into our tart with a famous spring time veg courgettes. Lemons and courgette have always been a well matched combination and now they will live happily together in our lunch time tarts, buttery, crispy, sharp and lastly mallow. 

If you're like me and against the grain you'll be pleased to know that at both Kaffeine stores all 6 of our salads are gluten-free. Substance and freshness using ingredients such as grilled salmon, heritage tomatoes, quinoa, spring lamb and of corse the king of spring, asparagus. 


No matter what your diet is we have it covered so come in, eat and get caffeinated.

Week beginning April 20th - Bumese menu

Still sticking with southeast asian region we head north of Thailand to Burma. Though I have never been to Myanmar it represents a special relationship and friendship I share with 2 of Kaffeine's staff. Khan and Win are both from Burma, I've worked with Khan for the last 4 and half years at GTS and Win for almost 2 years. If you read these blogs regularly you'll know Khan has taken charge of GTS kitchen and I poached Win for ECS. 

This weeks menu at Eastcastle street is dedicated to them and their culture, starting with a salad made with pickled tea leafs called Laphet Thoh. This is perhaps Burma most famous dish mixing together pickled green tea with chickpeas, peanuts, tomato and chilli. 

There is also a salad made with Udon noodles mixed with a spiced polenta sauce, crispy onions and pickled onions. It's a matter of opinion but this is also considered Burma's most famous fish. 

This weeks tart are fishcakes made with tofu, the fish base is a mix of salmon and cod win with smoked tofu and a ginger curry. Then fried until golden, Burma's equivalent to fish and chips.

Back up at the original Kaffeine Khan is working her fusion of Asian, Mediterranean and European magic. With chicken marinated in molasses, bulghur wheat, red pepper, courgette, pomegranates seeds and parsley salad. There is also a pomelo salad with mango, shallots, pickled ginger, chilli, herbs, peanuts,  and black sesame seeds. Last of the trios roasted beetroot, pickled radish, ricotta and walnuts, classic British fair.

Week beginning April 13th - Birch Sap and Infusion Menus

Last weeks Cambodian menu seemed to be just the ticket, proving to be very popular. One of the challenges of Kaffeine is estimating how much food to make every day, because of our premise license nothing can be made to order (not including beverages). So every day manager Gina and I go over yesterdays wastage, then predict the following days portion amounts taking into account weather, day of the week and the general vibe. What I noticed with last weeks Cambodian menu is people are craving more variety and balance of flavours.

This week Kaffeine Eastcastle is moving to the neighbouring west country of Cambodia for inspiration, Thailand. Flavours here are a balance of salty, sweet, spice and zest; rustic yet a clean finish on the palate.

Our salads this week all include a base that traditionally requires water to cook. However I have a fresh batch of birch sap water which is basically water but with many many added benefits, similar to coconut water. If you're not familiar with birch sap it is a spring like water that comes from a birch tree. Sugar produced by the tree during summer is stored in the roots throughout winter. In early spring the sap rises with the first thawing, carrying the stored sugar with it. By drilling a hole into its trunk you can draw the sap stored in the trunk. This water is a balance of electrolytes, potassium and other phytonutrients. In places like Russia, Scandinavia, Northern Europe and Northern China birch sap has been used as a remedy and tonic for people suffering with liver disease, diarrhoea, constipation, kidney stones, headaches, flu, dandruff and eczema. Even if you suffer from none of these symptoms birch sap is still beneficial. Making this weeks Thai inspired salads extra healthy by being absorbed by all the goodness and superpowers of mother natures tree tonic.  

Back down at big sister Kaffeine GTS chef Khan and her mighty team are cooking up an infusion storm. Before I went against the grain in my allergy free days at Kaffeine GTS I created the curried pea and feta scone (Australians say 'scrolls') these are one of my favourite cheat things to eat and Khan has put them back on the menu. 

The GTS flavour queen has developed several tasty salads, starting with a spiced beef asian salad mixed together with some of springs best new vegetables, asparagus, beansprouts and yellow peppers. Then we have a mediterranean salad of pink grapefruit, olives, corn, feta, radicchio and avocado dressing. Lastly new green beans with... wait for it... spicy tomato dressing. If you're sitting in free jugs of water are available.

Week beginning April 6th - Spring seasonality and Cambodian influences

This week for the Great Titchfield street menu, Khan has taken influence from the seasonal produce available at the moment including spring peas which she has used in one of our favourite baguettes with feta, courgette and lemon and mint dressing, and a wonderful organic spring chicken from HG Walters, roasted and served in our main salad. 

For the Eastcastle Street menu this week, Jared has taken influence from one of his favourite restaurants in Paris, and his story on this is below. 

Close to my boyfriends apartment in Paris is a suburb called Belleville, this is also known as the cosmopolitan hub of the capital and it is also where I am writing this weeks menu. I'm currently sitting in one of the many Asian eateries which are in the area munching on a plate of feisty black pepper beef. It's a popular and well know Cambodian restaurant called Le Cambodge, which happens to be a block away from HolyBelly, TenBells and Craft, three of Paris's more famous antipodean style cafes serving quality coffee. Because I am feeling inspired by my Cambodian lunch, this weeks menu at Kaffeine Eastcastle Street is based on the Golden Land's cuisine. 

This weeks savoury tart option is a fish curry soufflé baked in banana leaves, a combination of hot, salty and sweet with a touch of coconut cream and lime. 

Our salads will feature a ingredient that is steadily becoming popular in the UK 'galangal'. Used as a base for several of Cambodia's pastes which are then incorporated into cooking, from curries to dressings to being used as a rub before chargrilling meat. Galangal is related to the ginger family and was traditionally used as a tonic but has since made its way as a flavour enhancer. This rhizome is immensely fiery and pungent, once you try galangal, ginger just seems like a watered down cousin. 

All our salads this week are a fresh balance of sweet, hot and salty. There is quite a bit of peanut acton so please be wary if you have a allergy. 

So please come into Eastcastle this week and be fierce with our coffee and galangal.
